Peculiar properties:
Much appreciated for its nutritional properties, Senatore Cappelli flour is rich in proteins, lipids, amino acids, B vitamins, vitamin E and mineral salts such as zinc, calcium, potassium and magnesium. On the other hand, it contains a rather low level of gluten compared to other durum wheat semolina on the market and is easily digestible.
